Chop each eggplant into 3 parts and cook till it gets soften but not too soft, about 10 mins on high heat should be fine.
Fry fish with some vegetable oil and keep the vegetable oil used for a later step below.
Cut onion, tomatoes and scotch bonnet peppers like the above picture.
After boiling/cooking the eggplants, mash it till it's not entirely smooth, then add 1 cube Knorr seasoning and mix with the mashed eggplants.
Pour the vegetable oil used in step 2, into a pot and add extra vegetable oil to cover the pot base, then fry the chopped onions, tomatoes and scotch bonnets
Add 1 cube of Knorr seasoning, salt and a very little amount of curry powder(optional) to the above step and allow to cook for 10 mins.
While the above is cooking, crack two eggs and pour in a bowl, add a pinch of salt and mix together
After 10 mins, add the eggs and wait for about 2 mins before stirring.
